How much ham per person do you really need?

The standard catering rule of thumb is 0.5 lb (8 oz) of bone-in ham per person, or about 1/3 lb (5.3 oz) of boneless ham per person. This guidance comes from the USDA and industry sources like the National Pork Board, and it's built into every major holiday-ham planning guide for a reason: it accounts for how much of the ham you actually eat versus how much is bone, fat cap, or trim.

Why bone-in and boneless need different amounts

A bone-in ham (shank or butt half) loses roughly 30-35% of its raw weight to bone and trim once it's carved. That's why the per-person figure is higher for bone-in — 0.5 lb per person — even though the amount of meat actually eaten is similar to the boneless portion. A boneless ham has no bone to subtract, so the same amount of edible meat needs less total purchased weight: about 1/3 lb (0.33 lb) per person.

The formula

This calculator simply multiplies your guest count by the per-person rate for the ham type you select:

Total ham (lb) = Number of people × Portion rate, where the portion rate is 0.5 lb/person for bone-in ham or 0.333 lb/person for boneless ham. If you want leftovers, the calculator adds a 20% buffer on top of that total — a common allowance for sandwiches and reheats the next day.

Worked example

For 10 guests with a bone-in ham: 10 × 0.5 lb = 5 lb of ham. For the same 10 guests with a boneless ham: 10 × 0.333 lb ≈ 3.3 lb. If you want leftovers with the bone-in ham, that becomes 5 lb × 1.20 = 6 lb.
